Keep in mind that even if the eggs aren't eaten, if they are moved out of their nest box they seem to not hatch. You'll probably want to make sure that you don't have any stockpiles that accept the eggs and/or you have some way of keeping creatures from moving the eggs once they're in the box (forbidding them after they've been laid or shutting off access to the box somehow).

Hopefully eggs arnt one of those item type that are ALLWAYS edible, like meat is now.

That did make for a rather hilarious adventurer mod though...
