Maximum ammount of cave gators I can have?

I heard theres a limit on ammount of animals you can have. Is this true or no?

50 and pregnancies stop, roughly.  This means if you have 48 female gators, 1 male, and 1 who dies, then the number drops below 50 and they all immediately lay fertilized eggs, giving upwards of 450 newborn crocs.  If you have 49 females and 1 male, nothing happens.

Roughly.  It's "around" 50 but the exact number has never been pegged.  You get the idea though.

how long does the hatchlings take to mature? I don't see it on the wiki

Open the raws drop-down in the wiki.  The "hatchling" stage is listed as either BABY or CHILD.  For example, dwarves are BABY:1 and CHILD:12, so a dwarf is a baby for 1 year, a child for 12, and is then an adult.  Many creatures are not full size when they're an adult though.  A turkey is a child for 1 year, but takes 2 years to reach full size.  This is noted in the SIZE section of the raws.
