Nothing's ever simple, is it?  I go select my militia commander to give him a bad ass pet for his months of exemplary service training my dorfs.  Uh, yeah, there are 7 war animals available.  And since there's no way to select a specific one, nor any way to unassign a war animal after assigning it, it's pretty much a crap shoot who's going to get the bear.  That sucks.

You can slaughter assigned wardogs, or slaughter the owner :P to unassign it.

Breed more bears. Or, you could make sure it's the only war animal not assigned at the point you give it to your squad leader (pasture all trainable animals, release and train one at a time, assign to dwarf of your choice).

GREAT IDEA - Pausing the game and marking all other available war animals for slaughter should allow you to assign a specific animal to any dwarf. Just remember to change them back! Tested and it's a fail for my suggestion here. Also, pasturing the trained animals doesn't help in getting the game to assign the one you want. So train 1 at a time for full control.
