Do they come back after I killed them? How much are they worth alive? Are they hard to kill?

EDIT: Not on the wiki so it's either Fortress Defense or the Flora and Fauna mod. I suspect !!SCIENCE!! is in order.

No, nothing, and yes, extremely.  Phoenices don't exist in this game.

Currently no way to have them come back after death, so regardless of whatever mod you got them from killing them will just net you a dead phoenix. Maybe a small burst of flames or a cool item or something.

They're likely from Flora and Fauna, you can find out more by posting in their thread. If they say it's not from their mod, than it's from Fortress Defense but it doesn't sound like something Fortress Defense would add.
