Why did you kill him?

Catch him and try some fun stuff. I think elves will like your titan as well (uncaged next to their trade depot)

Because Forgotten Beasts are trap-immune and he was killing people.

Are Dragons, giant Crabs or Minotaurs forgotten Beasts?

If yes, then they are not trap immune, I captured at least 2 Dragons, a Hydra, one giant Crab and a Minotaur in normal Cagetraps, as well as my bronzegolem and otherwise use a trap with a cave spider web:

EDIT: To be honest, I have no Idea how to use a giant cave spider web with a cage trap ^^"

No, those are megabeasts. Titans and Forgotten Beasts are trap immune. those megabeasts are not.

Dragons are megabeasts, crabs are just regular creatures and minotaurs are semi-megabeasts.

Dragons belong with the megabeast category that includes the Hydra, Bronze Collossus and Titans to some degree, Rocs (apparently) count as Megabeasts says the wiki.

Minotaurs belong with the Semi-Megabeast category, that is they are weaker than megabeasts but stronger than most other creatures. The Semi category includes the Cyclops, Giant and Ettin alongside the Minotaur.

Forgotten Beasts are randomly generated creatures that usually have some sort of syndrome. They spawn in the caverns, for an aboveground variant see Titan.
