The problem with banning IPs, which I think they tried as well, is that you end up banning people who just use the site. My dorm IP is banned now, and I don't even have a wiki account. It certainly is a good effort for putting a stop to the current problem, I admit. And I can always just access the wiki from another university network if I need it that badly. Just my 2 cents on that part of your post.

We've been blocking IPs from the wiki. That only disables editing however, so I don't know why your dorm is being blocked. My guess is some other sort of attack that wasn't completely centered on the wiki.

One of those IPs was listed in a blocklist as a "dictionary attacker".  I'm guessing you have fail2ban or something similar set up and that's what blocked the university?

This might be a little late (I'm still catching up on df related things), but if the spamming gets really bad you could have the registration ask dwarf fortress related questions?

I doubt a spambot knows that that marble is considered a flux stone, and people who don't know that probably shouldn't be updating the wiki anyway

I think they've mostly (?) given up at this point.  At least, I haven't seen them making edits any more.
