My animals die of malnutrition

Do I need to keep them somewhere to prevent starvation or what?

Assign your grazing animals to a pasture zone in a grassy area so they can eat.

Assign your non-grazing animals to a pasture zone to get them out of your way. They're versatile like that.

What I do, when I'm lazy, is check the Hospital once in awhile. Any starving animal is introduced the the !!*Butcher*!!

So yeah, they survived for a while, but then died... I think it may have something to do with the grazing area I designated turning into a desert. Man I had to sacrifice a bunch of elephants too... so yeah, would the same thing happen in an underground grazing area? Also, what do I do about grazing animals assigned to restraints, like, let's say elephants, some of my elephants died while on "guard duty"

Elephants right now are bugged.  They require more food than they are able to graze.  There's a listing for it somewhere on the bug tracker I believe.  Toady is waiting to implement tree grazing, when elephants will be able to graze enough to feed themselves.

In the meantime you can mod the raws so that elephants don't require as much food, or don't need food at all.

I just hope he dies the same death that all dwarfs deserve: liver disease.

a) Some of the slower grazers would be able to survive space-restricted guard duty (like rabbits)
b) Elephants (and rhinos too IIRC) get hungry faster than they can eat. They cannot support themselves at present.

Ok, elephant=sacrifice for now, but what about the grazing area. I had donkeys and cows and whatnot and they all died even though they were assigned to a grazing zone, I noticed though that the grazing site slowly became a desert and then they died. How can I prevent that from happening? Or what about underground grazing? Does it require some special kind of stone floor or the animals can just graze unless it is a desert?

you need to make the pasture larger, probably, so they don't eat/trample all the grass.

Welcome to the grand world of true animal husbandry!

You need to make a couple of LARGE pastures, depending on the kinds of animals you have, the larger ones eat more.  (derp)  Then when one pasture gets eaten down to nothing, reassign all the grazing animals to the other pasture.  Hopefully this gives pasture A enough time to recover and regrow, by which time pasture B will be grazed to dirt.  Then rotate again.  If this still doesn't give you enough grass you have a couple of options:

1) Pasture C, D, E, etc until you have enough to sustain your livestock.
2) A visit to the butcher.

Personally I prefer 2 once the population has reached a point that they are eating my pastures down.

You can do underground pasturing if you a) have underground dirt, and b) breach the caverns.  Underground plants will start growing on any open underground dirt.
