I'm currently looking into constructing a retracting bridge over a volcano as a form of defense. However, I am unsure whether trolls will break the bridge down, resulting in their deaths being rather undwarfy as they are perforated by my crossbowmen.

Will trolls destroy retracted bridges over a volcano? If so, will they preferably be on it when they do this?

I'm pretty sure the only things that can destroy Bridges are size 100+ creatures, if they stand under it when it lowers, or dwarven fingernails.
