There's specific options in that menu for all the craftable bits. As far as I can tell, only remains count as "other," because my dwarves are still stockpiling hair, cartilage, nervous tissue, and chitin.

I refused to do outside refuse stockpiles for awhile, and they regularly filled up and had to be expanded.  Once I tried putting them right outside my entrance, I noticed that the stuff seemed to be disappearing faster.  Most of the stuff consists of partial goblin skeletons that have been killed in the last year or two.

I'm not sure if this is fact, but decay did seem a bit faster (perhaps because I rarely had to look at it? :P).

I keep a workshop or two with Make Bone Crafts on repeat, too, which may or may not help if you've got them littering your piles.
