"Winning" can be done usually by one of three ways.
1: Megaprogects that are a quantum leap beyond ANYTHING else, IE:
Flarechannel and Undergrotto.

2: Epic tales of Dwarfishness that defy all reason, IE:
The saga of Cacame and Morul etc.

3: Completting all aspects of the game that are avilable.
This is the most strightforward and achievable for us 'common' people.
In the old version this would usually ental:
Getting the King WITHOUT HFS,
Getting all Nobels and keeping them happy.
Finding HFS and succesfully eliminating all clowns.

And usually one or two of the following:
Taming a Giant Cave Spider.
Creating an automated Deathtrap.
Playing on the "Dwarf Heaven" map.

For me, I was able to "win" via the 3rd option through my fort CanyonCastle
In which I did inded do virtually everything on the list.  Of course that was on the previous version of DF.  With the new release the ways you can "win" for option 3 will have changed considerablly.

Taming a GCS is easy, and perhaps wasteful. The hard part is, of course, capturing it in the first place, and even harder is setting up a GCS silk farm (which is more efficient and potentially dangerous to do if they are left wild).

Don't forget the authors and politicians. And Obamas who get Peace Prizes for doing exactly nothing. That made me give up on Nobel Prizes, and Al Gore...
