Probably a stupid question: how to move the z axis

I am doing fairly okay with my dwarves but I don't know how to  go up or down levels in heighth can someone tell me how as all the tutorials and guides on wiki and in game assume you already know how

Where the keys are depends on your keyboard layout, but it's < and >.
