Newbie Question: Digging straight down and building straight up

How is this possible? I have heard talk of massive 1x3 towers with no flooring, chutes down into the magma sea, and stuff like that.

How is that even possible without losing your dwarves??

umm yeah....you lose dwarves, some people must die in the struggle that is dwarf fortress, for science, for profit, for the greater good, for power, for evil, for the reason you play dwarf fortress

First you dig it with flooring, then you cave something in on top to punch through all the floors.

Scaffolding.

To build straight up, build a staircase, as tall as you want your eventual tower/wall, next to where you want your eventual tower/wall. Once that's done, build your tower/wall. Then, remove the staircase, level by level, until it's all gone.

To dig straight down, dig a staircase, as deep as you want your eventual shaft, next to where you want your eventual shaft. Then, channel/ramp out the shaft. Seal the sides of the shaft with constructed walls if so desired. Alternatively, dig access to the bottom of the shaft, dig up/down stairs all the way up the shaft, then channel out the topmost up/down staircase. Repeat that last step until the whole shaft is clear. Alternatively alternatively, dig out the walls on every level of your shaft, then create an artificial cave-in at the top; the cave-in will take out all the floors.
