After having read the article about ethics on the wiki, I'm wondering what happens if you set dwarves to think slavery is acceptable. Would you be able to bring slaves on embark?

No, nobody seems to know for sure whether or not the slavery ethic does anything outside of worldgen events and determining whether wars start or not. If there is any effect, it's certainly not obvious.

That said, I have my suspicions.

Nope, I don't think that works very well either. I might be wrong, though. The one thing I know does work is EAT_SAPIENT. The others are a bit wobbly at best.

If you do set eating sapients as acceptable, would your dwarves eat dead dwarves? Or goblins?

Civvers won't ever cannibalise, but they'll butcher other races just fine.
