Basically, if the dwarf is of high enough level at some skill (i dunno, high master? lower?), has a corresponding workshop assigned to his personal use and probably has a level difference between his primary skill and his next best skill of at least 5 levels (meaning he's truly a specialist), he should attain a title of Master <professon> instead of the usual <profession> and begin looking for apprentices.

What it means is that he would claim a child aged 6 or older, make him do his chores (like work-related hauling etc) and in return teach the kid the basics of his trade, the longer the apprenticeship the higher the apprentice's skill gain, capped by master's skill level minus several levels.

Ideally, child's parents should get happy or unhappy thoughts based on their professions, like military veterans wouldn't like their kids becoming cooks or I dunno, metalsmiths hating woodcrafters or something.

We've already got some basic implementation of one dwarf teaching other dwarfs a skill, mostly on the military side. I'm fairly sure something like this is already in the pipeline. Check out the Future of the Fortress.
