Your walls are too thin. The wall to the outside should be at least 5 layers thick.

Don't use soil! Stone blocks or cast obsidian.

The great hall needs to be many Z levels tall. Preferably 4-5. With huge stone pillars spaced throughout.

If you've found it, adamantine.  Lots and lots of adamantine.  Personally, I'd mine out an entire tube.  Could be fun.

OK, I'm serious about the adamantine; at least a couple of statues, then designated the Great Hall as a statue garden.  Digging out the tube... well, you do so at your own risk.

You could build a miniature version of your fortress with blocks on the middle of the floor. The tourists will love it.

So we got monsters above, monsters below, dwarves in the middle and a party in the dining hall. Sounds good to me.
