it's no longer possible to specifically stock bones sadly, you'll have to make do with just making all-purpose refuse piles, afaik.

Yeah, I saw that when I was searching, thanks though.

Although, another question has come up, namely, that I've set my well as a water source, and despite this, people still complain of not having a well and go to the brook just outside. The water zone is the 8 squares around the well, along with the well, so there's room for them to actually get the water.

The only thing I can think of is that there may not be enough room in general, because it's a small platform above the brook, that is also a meeting place, so it tends to get a bit crowded at times.

That's a distinct possibility. Were your well in a larger room, I'd suggest deleting the portion of the meeting area that's immediately adjacent to it(assuming you're using a zone, rather than setting the well itself as a meeting area). As it is, sounds like you might want to set the meeting zone elsewhere. Perhaps nearby, but elsewhere. It may also have something to do with the time it takes for one person to get water - I've noticed that a well with a very deep shaft isn't very efficient at keeping dwarves hydrated - but again, that doesn't sound like it's appropriate for your situation(unless you mean that platform is WAY above the brook, by means of a cliff or tower or whatever).

Does the well have to be assigned a meeting place or zone? I thought I could just build it and as long as it says active, it's working.

As a well, I think so - though perhaps not for all things. I think in 40d there was something that required it to be a zone... soldiers filling their waterskins, perhaps... but I may be confusing that with fishing vs catching a live fish(the former they will do wherever unless ordered to keep to zones, the latter requires a zone always).

At any rate, I usually designate a water-supply zone around my well, just in case. Which brings to mind a possible solution - IIRC there's an option in the <o>rders menu to have dwarves only use designated water supplies. Slap one of these around your well. Dwarves might get a bit thirstier waiting for there to be room, but they should stop complaining about not using the well.

It may also be that dwarves failing to use the well is a side effect of other things they fail to respect and then complain about - nobles sleeping in the dorms and whining about not having a good bedroom when a palatial suite has been provided them; people taking their food to a nearby* office instead of the legendary dining room, then complaining about the lack of tables; etc. Forcing them to use water supply zones may help with this possibility as well.

(*: well, it was nearby when they first decided to go get food, anyway.)

The only time setting up a water source zone around a well works is when the well is immediately above the water, if your well is built 2 or more z levels above the water setting up a zone around it will yield 0 useable water zone tiles.  In fact, the zone around the well, when used, results in the dwarves getting water from UNDER the well, and not from the well itself.  Water zone are not needed with wells, ever, and when set up can just lead to problems.  The likely issue the OP is runnign into is too many dwarves trying to use the well, but the REAL problem is that he is making his dwarves DRINK WATER!?  Dwarves are alochol fueled and work at minimum performance when drinking water, it really is best to set up some farms, or gather berries if you are in a appropriate biome, and brew some drinks so your dwarves can live a civilized life and be happy productive workers.

Setting up a well (from a filled pond) in your hospital zone can be quite useful, though.
