how can i determine the gender of an animal? if i bring 2 of an animal from embark, will they automatically be a breeding pair?

Are the fortresses there for psychological reasons?  Are they trying to hold back entropy itself, rather than the goblin hordes?

in 31.xx every animal that has a gender has the male and female of the species listed in the animal list on embark.
In 40d, genders would alternate, with male being 1, female being 2, male being 3, etc.

You're shown this in the Z (status) -> Animals screen, there is a little character next to the name of the animal that indicates the gender.  In plaintext this is pretty easy to see (♀ or ♂) but in a graphics tileset it may be harder to figure out.

Not really, since cows and such, and the fact the description screen always has a few "his" or "her" in there.

Well if you remove the [MULTIPLE_LITTER_RARE] tag from dwarves I think they have like 2-4 children each time they give birth. And if you get enough mothers up on the pillars you can probably get a good waterfall going.
Ashes are technically fire-safe.

If you're using the Mayday graphics set the female symbol is a typical ankh but the male symbol is a bag. I lol'd when I realized that the first time.
