use of barrels

i had embarked into a 'terrifying' tundra full of zombies, with no trees, and so i had limited barrels...i grew too many plump helmets and the dwarves filled up the barrels that were for booze with the mushrooms. then maybe 20 dwarves died. i dug out a water ditch from an aquifer so they can drink now, and after they stopped going ballistic and having to be locked in bedrooms or strangling dogs, things started to bounce back, especially with a new wave of migrants... but im wondering if i can reserve some barrels for booze? other than designating a pile for barrels and locking the dwarves out, i have no idea how to do this.

Are the fortresses there for psychological reasons?  Are they trying to hold back entropy itself, rather than the goblin hordes?

In the stockpiles menu (p), you can reserve barrels and bins.  This is a global setting that will reserve barrels for tasks that are not storage of food, so if a workshop needs it for production (booze), it will use one of the reserved barrels.
