Any more threatening than a single rat?

They're just vermin (which cause unhappy thoughts and can make food rot faster). The "many rats" object will turn into a bunch of regular rats if it encounters any unit...like a cat. So its at worst an annoyance.

No .. at worst it's an unstoppable food-destroying machine!

Unless you mod them, they should just be a nuisance. The only problem you should have is if you have a dwarf who hates rats. You will need to make sure that dwarf doesn't get too unhappy (which can happen fast when they hate something common like flies or rats) or a single tragedy could cause a Funtm] tantrum and possibly a tantrum spiral.

A cat or two should take care of them, then all you have to do is atom smash or magma dump their corpses, since as of version 31.10 rot still isn't working (forgot to bring a cat in my 31.12 embark, not sure about that one).

So, is it going to turn into an unstoppable food-destroying machine or can I continue to avoid mind-controlling critters? If it's possible I'd rather chance a tantrum spiral than uber-micro manage the psionic demons, saving often as i do. At the least, hypothetically speaking, if I have a dwarf that hates rats, and I didn't start with cats, what can I do to avoid a clusterfun? The 'many rats' is right outside the entrance to my fort.

Give them a nice dining room, and cook up some valuable food  ;D

This can offset the bad thoughts from dead and rotten spouses, children, friends and pets, it shouldn't have any trouble taking care of a little rodent problem. Just give them *quarry bush leaves rost* to eat in the smoothed and engraved dining room designated from one of many +marble tables+ or something
