Here are a few things.
He only got INCAPACITATED by a fricken exploding cannon ball (Those don't explode right?) and a gatling gun. I just died right off each time I helped him get up from that shit when they shot me again.

The bigger they are, the harder they fall, right? That should probably read "The bigger they are, they harder it is to make them fall." But fat is meant as an insulator, so I guess it insulates against bullets. It's entirely logical.

Trying to hit Oddjob in Goldeneye is like trying to hit a time-warping Oompa-Loompa on crack.

That doesn't work in all cases, though. My dwarves manage to consistently catch every arrow fired within twenty feet.

Dwarves just like to sacrifice themselves. Self-sacrifice for the good of the fortress.
Unfortunately self-sacrifice doesn't work well when they ALL do it. Maybe dwarves are just constantly depressed.
