Stone blocks, though which stone is somewhat situational. I always build an obsidian farm when I embark, so the outer curtain walls around my above-ground courtyard are always obsidian. Internally, shops, architecture, and other buildings are frequently "bulk" stone, like alunite, mica, felsite, or anything not brightly coloured or useful, though depending on how large the curtain walls get I might use obsidian internally as well. Glass I don't use much, though my butcher's shop is usually built from green glass, because I like the way it contrasts with the tanner's built from red stone. Metal is used primarily for the intended purpose of arms/armour, though in wood-short and metal-rich areas I'll use it for bins and barrels, and of course noble mandates. Soap I haven't made in a long while, and wood is used mainly for potash/beds/charcoal. However, in the case of short-term interim constructions I will use any damn material that's readily to hand.

speaking of making stuff out of glass, my masons wont do it. they just don't. its weird.

Aboveground, generally clear glass; there's something nice about building an impenetrable greenhouse for my above-ground plants as well as a dwarven solarium for the well area.
