or building a tunnel through the mountains guarded by three gates, leading to a beautiful city graced by two trees, one made of gold and one made of silver

wait, wrong elves

Didn't the Valar make that city?  If they did, you'd have to change that to seven gates and no trees.  It wouldn't be anywhere near a DF elf city, though: too many good smiths in Gondolin.

This fortress is turning into some kind of supervillain lair or something.
You do remember that you've been farming gigantic wingless dragon-fish for profit and Fun, right?

Watch out for kobolds. the (TRAPAVOID) tag means your trap halls are useless, and they get tons of stuff from the caravans the goblin ambushes kill

...Does anyone else now want to leave offerings for the kobolds, just so you can smash their puny sieges and laugh?

my champion is now holding his artifact crossbow by his upper left leg and still shooting with is just fine despite having no hands.
What? He's firing from the hip.

I was thinking more along the lines of this legendary champion, all clad in dented and dinged up steel plate, his blood-drenched axe slung over his back, a notch in the handle for every enemy that saw the swing of that blade as the last sight they ever saw, a battered shield strapped over his arm... and a fluffy, pink stuffed hippo hidden discretely in his breastplate.
