I still just listen to the DF music.  I usually make up lyrics about whatever my dwarves are doing or random, silly things and sing along with it.

ALL the Myst soundtracks (Riven is the best for digging)
Select Final Fantasy OSTs (8,9,12)
(Someone already mentioned the Shadow of the Colossus OST)
The ICO soundtrack (If you haven't heard of ICO, shame on you)
The Granado Espada OST
Otyg (Swedish folk-rock FTW http://en.wikipedia.org/wiki/Otyg)
The White Chamber OST (http://www.studiotrophis.com/site/downloads Man its creepy...)
The Longest Journey OST (Find in on wayback-machine or summin, its free to download)
Chrono Cross OST (I'm surprised that nobody mentioned this one yet)

And if your get into a mood or something there's always Rotersand, Tristania, Sirenia, Epicon, or Negative Format.

If you have a dual monitor though you could just watch anime or Primeval or something while digging.

Oh man... Good call. Generally I listen to Toady's guitar because it jumps around between tempos and time signatures and lets me get in the zone, but any of the Myst/Riven themes would be perfect for a second option.

I don't know if it fits Dwarf Fortress but while I play it, there's always hardstyle or Finnish pop playing background. No idea why.

Plenty of finnish metal, but I also listen a lot to the Myst soundtrack. There's just a shitload of totally different good music- honestly too many good ones for me to link, you should explore the playlist. When I'm just plain in a good mood, Jazz Manouche.

Ride of the Valkeries, and Quake 2 music.
Also, Fallout 3 music fits well.
