I cant seem to find where shells/bones are in the stockpile section

The entire "body parts" category under Refuse is bones, shells, teeth, and tusks.

will that also allow random arms/legs to go into that pile

Those are supposed to be under Corpses and Graveyard, but I've seen my dwarves stick some rotting stuff in my bone pile. It might be a priority issue, because my general refuse pile was full, so it's like "hey, there's a bone in here, that works!"
