Led Zeppelin have some good ones; "Immigrant Song" is wonderfully fitting for that first tense few months after embarking, and "Ramble On" suits Adventure Mode to a tee.
Enya's "Book of Days" would be awesome megaproject-construction BGM, as is the theme tune from The A-Team.
And I defy any of you to listen to this whilst cleaning up after a particularly bloody invasion and/or tantrum spiral and not cry real tears.

Never used Dwarf Therapist, mods or tilesets in all the years I've been playing.
I think Toady's confusing interface better simulates the experience of a bunch of disorganised drunken dwarves running a fort.
