An injured cave crocodile attacks from ambush...

And passes out! Turns out the croc had been brained. I had a near by dwarf practice his unarmed skills on it.

Skill gain is based on the opposing roll.  An unconcious enemy makes no roll and thus no skill is gained.

Maybe that croc also activated some trap on his way?

Yeah, it's usually traps they spring while sneaking around, that cause them to appear already mortally wounded.

Not always though, I've had giant toads attacking from the river while already heavily injured, even when there's no traps around. Perhaps the animals and monsters attack each other too.

I'm quite sure of that. In my current reclaime fortress game I had to deal with a group of three giant cave spiders (nasty beasts with their "paralyzing beams") that killed a few naked mole dogs as opener for their dwarven dish.
