So what makes some items (weapons, ammo, etc) binnable, while other items (stone, raw resources, furniture) unbinnable? What tags can I manipulate to have the effect of making stone and what not small enough to fit into bins?

Whether an item fits in a container or not is entirely based on its type - you can't just make furniture binnable as crafts are without making it something other than furniture.
