I was reading the wiki on obisidan farming but tqo questions remain unanswered, namely:

What happens if you pour magma over water?

If, for say, on the same z-level, the magma was north, and the water is south, it would create a wall on contact and thus block off the rest right?

Yes. This will happen even if it's not 7/7 water or magma, I think. Just 2/7 will be enough.

 Magma on water or water on magma is irrelevant. On contact the contents of the tile are obliterated and obsidian fills the tile completely.

 Yes, that can happen. If, however, one was sufficiently pressurised (the water) it would naturally "ride" over the top and solidify your magma. The way to do it (says I) is to pipe in from the top (as in, z-levels above), one layer at a time out of different hatches (one for magma, one for water.) Magma then water. With careful sizing of your reservoirs you can ensure that accidents can't happen.

Unless you forget which lever opens your access hatch.
