Yep, skilled champions will do that. Morul, the Most Interesting Dwarf in the World, routinely takes out entire sieges of seriously buffed-up orcs (increased size, damblock, and steel equipment). Basically, once the dwarf reaches a certain amount of skill with wrestling and shield use, they become essentially unhittable; the rest is just a matter of time and if they have the endurance to kill everything before getting overexerted.

This is just a day in the life of a champion.

Heck, I sent my slightly brain injured champion who had stopped sparring long ago but was hyperlegendary wrestler and decent in shield skill and took out an entire ambush party all alone. He was initially distracted by a kobold and was chasing it, but he ran into the ambush, forgot about the kobold and proceeded to knock every gobbo out. No, he didn't kill them, he just incapacitated them enough to be unconscious and then he took his time  killing   them   one   by   one.

Hell of a character, lol.

My mayor doesn't spar, ever. He is, however, legendary in Masonry due to a mood and Record Keeping through hard work. His social skills and appraise are also pretty high.

I've been throwing him into the arena with copper armor and a copper spear and he's killed nineteen gobbos now without a scratch.

Yep, one of my forts has a military dwarf with over 300 kills, both goblin and orc. I even cleared a wide area of trees in front of my entrance so I could watch the enemies fly farther before exploding on the side of a tree. It is really quite impressive to watch when a seige comes.

That may not work out quite as well as you might expect.

I once killed a fortress this way.  I built a tall, tall, narrow tower.  All the way up the tower were hammer stockpiles.  At the top of the tower was an armor stand.

I drafted every draftable dwarf, assigned them all to use hammers, and used the armor stand to designate the top of the narrow tower as the barracks.

I called it the Tower of Destiny.

Even the highly skilled dwarves were falling to their deaths.  It turns out that they will occasionally dodge an attack by diving into empty space.

Clever.  Dwarfy clever.

Thought. Dwarfs landing on animals will not get hurt.

Thus, you could prepare a kitteh cushion around the base of the tower.
