The DF wiki isn't as clear as I would like it to be concerning these critters, and this is the first time I've had to deal with them.

Do I need to edit the ethics entries in my entity_default file?  Or can I just add a [PET] tag to the individual critter entries?

I don't know. The [PET] or [PET_EXOTIC] tag is required for tamability, and the ethics would likely have to be changed as well.
Do it for SCIENCE.

inteligent critters with pet tag will do random stuff like pulling levers, open dwarf passable doors etc. i would not recommend that. also any creature in an entity and inteligence is subject to the "eat sentient" flag (for example elves got that on yes, dwarves and humies not)

From "Angroshs Kinder" Das schwarze Auge Zwergenhandbuch - (Angrosh Children, the dark eye, german pen&paper, dwarven handbook):
"Elves!? Their men dont wear beards, and their women bathe nacked to lure you into the water and drown you. Thank Angrosh they are as ugly as the day and all big and skinny."
