You get a bit less bones, but I don't think the time invested in them fully growing up is worth the 2 or so extra bones you get.  Just keep a couple dams and a stud and you're good to go.

Eh, the way I see it, if i let them grow up, then it's a net gain for me - after the 1-year waiting period, I'm getting full-grown cattle at the same rate I'd be getting calves NOW otherwise. So, long-term, meaning "after a mere 1 year," I'm better off.
