I really like the idea, However it would have to be more complicated. Food had over and over would become unwanted, boring, disliked. Im not exactly sure how it would work but generational likes and dislikes is the very essence of culture.

Only in the modern world.  Prior to the advent of mass media culture changed slowly.  Food culture still does.  Japanese food today is pretty much the same as Japanese food 500 years ago. 

Also note that most traditional foods are 'what's cheap enough around here for the peasants to eat.', and can change quickly when cheaper or easier to grow foods (I.E. the potato) are introduced

Site-specific culture could apply to style and grooming as well.  Imagine a hardy band of traditionally bearded dwarves with long flowing locks striking out into the wilderness.  They spend years building an extensive aboveground complex, during which they are exposed to all sorts of parasitic vermin more than happy to call their beards and hair home.  Though they hate it, for the health of all they find they have to keep their hair neatly trimmed and go *gasp* clean shaven.  By the time the fortress is completed and the vermin are brought under control, the second generation of dwarves have been born and raised, and naked chins are the fashionable norm from there on out, and the site becomes known far-and-wide for its abominable lack of facial hair.

This is an extreme example and requires things like lice and fleas to be added to the game, but you get the gist.

Where dwarves have choices in terms of what they make (say instead of making specific clothing, a tailor is told to "make clothes"), their products may be weighted toward the fortress' cultural norms.
