Can the itemized water be picked up and used later? If so, this opens up new and exciting possibilities.

Give it a test: pause the game, forbid the water stack, unforbid it, mark it for dumping, then unpause.  A dwarf just might come by, pick those water globs up in their hands, and move them ... or not.  Not like it would matter, as the water doesn't do anything.  As a stack, it won't even make a tile muddy.  You could try to forbid it to keep your dwarfs from wasting time cleaning it up, hide it so it's no longer noticeable, then see if it evaporates on its own.

Boy, what a waste of time that would be.
