Hollow out a mountain and fill it with obsidian, then carve out an obsidian above-ground fortress that still counts as being underground.

Construct an obsidian monolith in an area where rhesus macques are dominant and always around and watch them evolve. ;D

Advice from the Dark Dwarven technocracy:
1) Oil Rig which pumps magma from the bottom of the ocean, has supports from below and can be isolated from the outside world. Food might be a problem until you build an elevator underground.
2) Tanker which can hold magma. Should be docked at the rig.
3) A submerged submarine. A submarine with a proper shape requires a very deep ocean.
4) A functioning dam on a major river. It should acquire power from the falling water. You can also use it as a hydro-research facility for testing.
5) A maximum security prison built on a large lake with carp. Use Vertical Bars for creating cells, dump creatures inside. You can make the unimportant dwarves prisoners and limit their access to bedrooms (cells), a single large dining room (mess hall) and the courtyard (statue garden).
