I've been trying to channel water from a surface river for various reasons. I've already lost one dwarf to longnose gar when alcohol supplies dropped when I wasn't paying attention.

I remember reading that walls and grates can be used to allow water flow while blocking large and dangerous creatures. Is there a way I can do this besides crafting/building floor  grates for every tile of water I plan to use?

That might be a little excessive. Better to create a water channel that will bring water to some place safe within your fort and use wall grates to prevent dangerous water creatures from entering.

Further, I recommend you channel some slopes into the banks of your stream. It might save a fisherdwarf or two.

Channel out a line, then build a fortification in it, then seal up the steps leading into the channel. Channel out a square and then channel out the rest of the line to connect it to the river. Once it's full, build a well. Problem solved?

Dwarves always drink from wells first.
