Behold, thus are my findings:

Appending:

[SKILL:AXE]
[TWO_HANDED:5]
[MINIMUM_SIZE:5]

onto the end of the Corkscrew entry resulted in gaining 10 wrestling experience every time I attacked with it.

you don't need those tags to get wrestling experience. You get wrestling experience from attacking with any non-weapon item.

Yes, and those tags do not make the giant corkscrew an axe.  If anybody has any ideas for what tags might, I have 3 giant corkscrews sitting in my test fort that I can still use.

As deon stated, the only way would be to make a (totally separate) object_weapon with the name corkscrew.

You can wield them in adventure mod anyway,it uses wrestling
so there is no need to add any tags at all. :)
