I think it should be possible for your dwarves to construct carts out of wood (and possibly certain metals) for use in hauling. These carts would allow a single dwarf to carry more stuff, or maybe make the carrying go faster. Maybe you could even attach horses, mules and camels (and other beasts of burden) to them and allow even more carrying capacity/speed. This would make those animals useful as more than meat.
