Easy, just mine everything flat, make a mold for your fortress made of bauxite walls, fill 'er up with magma, and start pumping in the water!
just some precisions you don't need bauxit walls, even wood will do it (ok it is silly wood wals but still) and by filling up i think you better fill it level by level if you will awoid: Cave-ins or magma resting in the lower levels ...

If you are going to create dams and fill with water, becareful you have enough water to fill the space before it evaporates. I failed at making a simple multi-z lake just for this reason.

currently I'm digging a huge lake to fill with water, after I build up a fortress in the hole. anyone got some quick stone-removal tips, other than channeling? this lake is gonna be huge.

Dig and collapse. If you leave the top layer undug, you'll get rid of massive amounts of stone.

You should totally make it underwater, with windows, in an evil high savagery biome.

You counter the risk of windows breaking with automated floodgates set to seal an area.

O hell I think I need to make that now.

Ramps (with caveins turned off) work wonderfully for digging large holes. Just do it one layer at a time.

It was not created by filling in a hole though- it was made in the ocean via a magma filling method.

I was inspired by PTTG's fortress of the lakes. anyways, i think I'll try the channel-beneath method. it worked for my magma pit, so I have no idea why I didn't think of it before.

I will post pics.
