Too many pools!

Everywhere I go I find pools, pools, and more pools. Is there anything that i can do about this?

What do you mean?

If you play on a scorching temp map, the pools will dry up in a season or two.

If you set the grass on fire it will boil away all the water on your map.  It will also burn all the grass and kill all the wildlife that isn't flame proof.

Will the scorching temp have any long term effects on the fortress?

Yeah, you won't have any pools. That can be bad, if your dwarves are in the habit of getting wounded.

Yeah, you won't have any pools. That can be bad, if your dwarves are in the habit of getting wounded.
Just make a repertoire that is both to divert rain, and also keep it away from contact with the outside soils, line it with stone to insulate.

Use an assemblage of screwpumps to consolidate them into a super-pool made of constructed walls.

The Raven has been knocked unconcious!

Elves do it in trees. Humans do it in wooden structures. Dwarves? Dwarves do it underground. With magma.

Alternatively, start on biomes that don't have pools, like deserts, tundras, glaciers, mountains, badlands, and so on.

Drink water from a murky pool and we'll talk again. I can understand the dwarves... *shudders*

However, as annoying as they are, they are life savers, especially with no streaming water around. I once embarked in hot climate, all pools dried out and my wounded champignons died of thirst

Ok, Point I suppose. I guess I've just always used aquifers for my water, and my forts are usually too far underground to bother with the pools.
