I would think that you should use doors instead of floodgates if you can hook doors up to pressure plates. Floodgates have a long delay which might screw up the flow.

Actually (unless it's changed in the last version) untrained dwarfs will just stand there and drown.  Maybe the ones you are thinking of have swim exp?

No, it doesn't work that way. They'll only stay if there's no way out. In my latest I've had a problem with dwarfs pathing through 6/7 water.

I can confirm that, just accidentally broke through an aquifer while digging out an obsidian farm, and before I savescummed out, my miner got out just fine despite no swim levels.

Yep, after embarking on a frozen main river and it thawing on me when dwarves weren't ready with hauling all the stuff from the caravan yet, all of em plunged into the 7/7 water and managed to get out unscathed via a staircase i wisely dug before. (Ramps will also work, just make sure that stair or ramp is on the level of where the water is, else dwarves can't path out and will drown)

Magma would clean up just about anything, including dwarven children. By the way, this is the first time I've heard of someone actually complaining about a tree farm.
