There are a few benefits. Meals have a quality modifier, so food prepared by a skilled cook gives the eater a happiness bonus. Then there is the happiness bonus from eating their favourite meal. Say a few of your dwarves like carp but you only have a stack of 5 carp. Without cooking, only up to 5 dwarves can get an extra happiness bonus from eating their favourite food. Cook that stack of carp up with a bunch of other ingredients though, and you can have 65 carp roast meals that makes a dwarf who likes carp extra happy. Even better, if some other dwarves like dwarven syrup and that happened to be one of the ingredients, those same 65 carp roasts also count as a dwarven syrup meal. If a meal contains an ingredient, all the food in that stack is considered as that food type.

I tend to have a single stockpile set for prepared meals... so... does it make sense to set it to zero barrels?
