I never had the patience, but I sure would love to build a caravan catapult.  It's not my idea, mind you, it's one I saw in a Dwafwiki movie deal, but man, talk about funny.
Or a Goblin powered engine with pressure plates and cages.

I don't know if fountains actually work or if a fountain has any effect on creatures above them, but if both answers can be answered with "Yes", I imagine FUN! ;D
Basically just build a giant watertower with a water reservoir. Build a channel from the reservoir to Z-1 or Z-2 (with a floodgate, of course) and a channel upwards to the surface. Build floor grates over the channel and if goblins come, trap them on the floor grates, open the floodgate and watch the goblins flying and falling to their doom.
