I am bad at math

So, could somebody help me figure out what my gridsize should be for a 16x16 tileset if I want 1600x1200 resolution to be square?  100x75, right?  Or am I way off?

That would give you a 1600x1200 window for DF.  However, keep in mind that all of your monitor's space isn't actually taken up by DF when it's windowed.  You need the title bar and the task bar, and the edges of the screen.  I'd make it 95x73 just to make sure you don't miss things.

Thanks.  Another, somewhat unrelated question - how do I get the seed for a worldgen I liked?  This one's really good.

If you open it in Legends mode, you can export world information. This tells you the seed and other worldgen parameters you used.
