HFS isn't on every map.  On the World Map, it's on every map tile containing mountains, but it isn't necessarily on each fort, because it's likely that you'll pick an area that doesn't include that tile unless you have "Show Other Features" turned on.

My favorite 'non-cheaty' means of getting rid of stone is to have a handful of dedicated masons (read: expendable cheesemakers scum) running back and forth building a giant mausoleum. This is generally a huge series of towers with hanging walkways with oodles of little cells to put my fallen heroes.

This was great when my fortress flooded due to a plumbing problem that I couldn't fix before the goblins ate me alive. When I reclaimed my fortress, I set up shop in the mausoleum until I could drain out the old stronghold.

I have lots and lots of sandstone. They go into mechanisms until I can replace them with bauxite mechanisms. I use an incineration chamber (a retracting bridge over a magma pool) for garbage disposal.
