I set him to highest, turn off all hauling jobs and make him hop to it. It's the same noble for all roles and a legendary clerk keeps everything up to notch with short sittings. I even use the manager screen instead of issuing orders myself.

Highest. I generally find that it means one less useless hauler walking around wasting food.

I wait until the first immigrant wave, find a peasant that has a personality I don't like and tell them to update records for the rest of their miserable life. Works well too, not only does it mean that I ahve a legendary in case I need a militia for whatever reason, it also means that there's one less useless hauler wasting my food supplies.

Useless hauler? I NEVER have enough haulers, it seems. If I wanted to get rid of them, there's always the Fortress Guard. But I hate to do that, because I can always use haulers.

I use one of my "long term" original seven (eg weapons + armor smithing) dwarves as a book keeper. He then takes care of book keeping while he waits for me to get smithing, glassmaking, etc up and running.

Yeah, I leave it on lowest till I get an immigrant wave, then select a useless dwarf and make them the bookkeeper and set it on highest.  I can find things until then well enough that setting up an office and giving one of seven dwarves another time drain doesn't seem worth it, after that though, it's a source of work :)

I use one of the first wave immigrants, set them to highest and then use them as a very fast hauler once they finally become legendary. I also use them as manager to authorise job orders, as they usually can finish what they are doing fast enough for my tastes.

I gradually increase it as needed to see all the numbers on the status screen, so it ends up at Highest in the end.

I always mean to leave it at medium, because it's all you really need and in my experience it does prevent the stone category lag lurking in the stocks menu.  I can never say no to all that easy experience, though, and usually end up setting it to highest anyway.

I use highest until my bookkeeper gets to legendary, then i switch to lowest.
