Alternatively, let all professions carry a relevant tool. Hammers for the smiths and the masons, axes for the butchers, etc.

Did anyone else think of "The Butcher" from Diablo when reading this?

Well compared that the Butcher has an Axe and not a Knife... No

Yes i thought of The Butcher, and his cleaver (which was a axe for game purposes)

The use of Daggers for civalian/early military use is a decent idea considering the amount of them you can get off the kobolds and as JayThirtySeven pointed out some cultures it was perfectly common to have a knife on your person.  but why stop at just knifes, wouldn't smiths have their hammers with them?, engravers with mallet and chisel?, tools of the trade that like a miner's pick can be useds as a alternate weapon?

Bear in mind that assigning weapons to professions will force people to choose between them. It'd be irritating to not be able to have a woodcutter/carpenter anymore

I'm all for workshop construction requiring appropriate tools bought on embark though
