How do you lock limbs, gouge eyes etc... I'm an expert wrestler, expert swordsman, very though, very agile and extremely strong.
Whenever I grab arms or legs the only things I can do are throw and take down, same with the head, I can't seem too lock the limbs.
How do I lock limbs and gouge eyes?

You need to grab with your hands and not your arms to break limbs and gouge eyes, so drop your weapon.

Certain parts of the body in vanilla DF can not be locked, such as necks. You can also only lock any certain body part a number of times, and then you can no longer break it.

Gouging eyes is a random attack that can happen when you are unarmed and I think that your main skill has to not be wrestling (you are not an elite wrestler when you look at yourself)

Grabbing someone with a shield or weapon functions exactly the same as grabbing them with your hand. Evidently your shields and weapons can function just like hands, you can even grab people with corpses you have picked up.

sorry 12amroy, but you're wrong. Gouging eyes is done by grabbing the head with an open hand, and then selecting gouge left or right eye in the wrestling menu. And I've never seen a held item work like a hand...

You have it totally wrong.
Grabbing with shield or weapon DOES grab but is in NO way the same as grabbing with an actual hand.
Gouging is an action that can only be done with an actual hand.  It's not random at all.
