While adjusting workshop profiles to only let certain dwarves use them is good, something I think would be even better would be to allow only certain materials. Perhaps you'd like to make a large stockpile of obsidian blocks for that tower? Allow only obsidian. Maybe you need to get working on magma-safe blocks and grates for your channeling? Only allow bauxite at a mason's workshop, or steel in a smithy.

I think this is a good idea. If you hadn't posted it then I would have!! You could just make a stockpile next to the workshop and only allow the type of material you want go in the stockpile.
