Really? I figured they'd learn how to do that when sparring in general.

Wrestling = Dodging ability. That is simply it, unfortunately. If you don't have the wrestling skill, you don't dodge all that well.

Yes, and probably does a crapton of damage with the pick.  It's worth looking into.

Except that you'd lose your legendary miner probably, because they don't naturally get armor skill.

But how long does it really take to get another legendary miner?

You could put him on a secondary training regimen:

Get him to Accomplished in Mace, Hammer, Axe, Sword, and Wrestle, then never let him spar again. I've been micromanaging my training as such, to make Accomplished Wrestle/Hammers that are Elite Marksdwarves. So far I've had one sparring death, and one permanent neck injury... from fully armored dwarves. Sigh.
