Making a lake

So, I have an 2-z area walled off to serve as a reservoir, and a river running through the upper level.  What I want to do is collapse the whole thing into itself, but my early attempts are less than encouraging.  The one time I did manage a collapse, it looked like the river was taking the water out as fast as it was going in, despite being 1 z below the previous drain area. 

Also, tips on digging out channels of single widths? My miners are tards and keep getting themselves stuck, but there has to be a better way than designating them one at a time.
